I need love fast food easy dinner recipes that are also cheap. If they can be made with little mess to clean up after, all the better! And if my kids will eat it without complaining….well, I save that recipe in a locked box!
I found this easy ( if a recipe fits my definition of easy, you know it really will be, just so you know!) quiche recipe over at Healthy Mom’s Kitchen. If you have eggs, cheese and some frozen spinach in the kitchen, then you can have dinner- yummy, hot and cheesy from the oven in no time! You can also add, like the original recipe called for, turkey sausage. But believe me, it is not necessary if you do not have any. (we did not use any in our version because we are vegetarian here, and the quiche was awesome as is!)
Ingredients:
5-6 eggs
2-3 cups of your favorite shredded cheese
1/2 teaspoon of salt and 1/4 teaspoon of pepper
Some chopped up Basil Leaves or Basil if you have any
10-12 oz. frozen spinach
Directions:
(Heat a non-stick-sprayed glass pie dish in the oven, set to 400 degrees while mixing up the ingredients.)
1. Combine the eggs in a bowl and mix with the cheese and salt (easy so far, right??)
2. Saute spinach in a pan with some oil, salt and pepper to taste.
3. Combine spinach and basil with the egg mixture, and mix gently.
4. Carefully remove hot pie dish from oven; pour quiche mixture in and spread evenly on top. Sprinkle extra cheese on top and if you like, add a couple of bail leaves for decor.
Place dish back in oven and cook for 25 minutes at 400 degrees.
